Pizza holds a special place in my heart- I mean, my favorite pizza place is the first restaurant I go to when I come home form school. One of my friends told me about a recipe that she tried at home and loved, and it was a recipe for zucchini boats. Zucchini boats are basically stuffed zucchinis- you can make an Italian stuffed boat, or even a taco boat! This sounded too good not to try, so I whipped up some boats of my own using a simplified version of this recipe.

Zucchini Boat Pizza

    Ingredients

  • 1 zucchini
  • 1/2 cup marinara sauce
  • 1/2 cup cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 Tbsp sundried tomatoes
  • 2 Tbsp olive oil

    Preheat oven to 350.

    Cut off the ends of a zucchini and cut in half length-wise.

    Use a small spoon to scoop out the pulp until a 1/2 inch thick shell remains.

    Chop up the pulp and sautee it along with onion, peppers, and sundried tomatoes (in olive oil).

    Place zucchini shells in a greased pan (I used olive oil), and add a bit of marinara sauce to the base along with a very thin layer of cheese.

    Add in the sauteed vegetables.

    Pour on a thin layer of marinara sauce along with a thicker layer of cheese. If desired, sprinkle on some spices (I used Herbes de Provence).

    Bake in the oven for about 25 minutes.

    Take the boats out of the oven, let cool, and enjoy!

The great thing about this recipe is that you can customize your pizza (or taco) to how you like it. Feel free to add spices, pepperoni, ground beef, salsa, etc. This gluten free recipe also makes a relatively, in my opinion, bland vegetable into something exciting. Take one bite out of this boat, and you'll see how eating your veggies has never been more delicous.
