Ok. I know I am jumping the gun here and that summer is still technically two months away. But I’m getting antsy. Classes are over in a few weeks, which basically means summer anyways, and the recent warm-spell in Ithaca that allowed me to wear shorts and a tank top in mid-April tells me that it is already summer (disregard the snow that also just happened).

So summer may be far off and I may just be delusional, but a girl can pretend, right? So can you with this super simple salad. It may not be summer quite yet, but this tasty and easy salad is never out of season.

Easy

Prep Time:   10 minutes
Cook Time:  0 minutes
Total Time:  10 minutes

Servings:  4

Ingredients:
1 can cannellini beans
5 small tomatoes
1/2 pound string beans
1 container sprouts
1/2 a lemon
Salt and pepper, to taste
2 tablespoons olive oil

Directions

1. On a cutting board, quarter tomatoes and string beans. Combine in a medium mixing bowl.

2. Rinse beans. Add to mixing bowl.

3. Add sprouts to the mix and drizzle with olive oil, mixing occasionally.

4. Squeeze a lemon over the top, add salt and pepper to taste and mix thoroughly.
