It's just like the title says: let's kick off this summer with BBQ pineapple chicken skewers. I've got to say, I've never made my own BBQ sauce, but the sauce in this recipe is totally killer. Seriously, this sauce is the best I've ever had. So even if you don't like chicken or pineapple, you can use this awesome sauce on anything you want.

Either way, this meal was fantastic. I got to enjoy it before the weather got awful where I was. So enjoy the weather while you can and go out an grill some delicious pineapple chicken skewers! 

Grilled BBQ Pineapple Chicken Skewers

    Ingredients

  • 1/4 cup soy sauce
  • 1 cup ketchup
  • 1 tablespoon mustard
  • 1/4 cup honey
  • 2 tablespoons garlic powder
  • 1/4 cup brown sugar
  • 1 whole pineapple
  • 4 boneless chicken breasts

  • Step 1

    Combine soy sauce, ketchup, mustard, honey, garlic powder, and brown sugar together in a small pot. Stir together until smooth. Let cook for 10 minutes on high or until thickened.

  • Step 2

    Chop the pineapple down its sides, avoiding the center to stay away from the core. Chop the fruit from its skin, creating large chunks.

  • Step 3

    Chop the chicken breasts into medium chunks.

  • Step 4

    Dip the chicken chunks into the BBQ sauce made in step 1.

    #SpoonTip: If you would like to save the rest of your sauce, do not dip the raw chicken directly into the whole pot to prevent the spread of salmonella. Instead, pour a small amount of sauce into a separate bowl before dipping in the raw chicken and add more as needed when coating the chicken.

  • Step 5

    Run a skewer through the chicken and pineapple chunks, alternating between each.

  • Step 6

    Grill the skewers until their temperature reads 180°F.
