Summer’s finally here, which means I’m constantly digging around my freezer for coffee ice cream — not the healthiest midnight snack, I know. This time, instead of spending money on ice cream, I decided to take food I already had to make a mocha nice cream, AKA mocha-flavored banana “ice cream.” It’s healthy, delicious, and easy to make!

Mocha Nice Cream

    Ingredients

  • 2 cup frozen bananas (chopped)
  • 1/4 cup chocolate chips
  • 1/2 tablespoon cocoa powder
  • 1 teaspoon instant coffee

  • Step 1

    Add frozen bananas to blender and blend until creamy.

    #SpoonTip: If the blender isn’t hitting anything, stop and move the bananas around.

  • Step 2

    Add in cocoa powder and instant coffee.

    #SpoonTip: If you don’t like instant coffee, add a shot of your favorite espresso, chilled, instead.

    Blend until creamy and smooth.

    Scoop into bowl and stir in chocolate chips.

    #SpoonTip: If the nice cream is too soft or melted, put it in the freezer for an hour or two.
