These adorable mini vegan banana popsicles made with natural, plant-based ingredients might be my best summer snack idea yet. These popsicles come together quickly and can be enjoyed in less than two hours.
While adding a topping to the bite-sized treat is at your discretion, the fundamental part of this recipe simply takes two ingredients. Bananas are a ubiquitous plant-based staple and coconut yogurt can be found in most major grocery stores these days.
Mini Vegan Banana Popsicles
- Prep Time:5 minutes
- Cook Time:1.5 hours
- Total Time:1 hour and 35 minutes
- Servings:1 dozen
- 1 large banana
- 1/3 cup unsweetened coconut yogurt
- 1 tablespoon bee pollen (optional)
- 1 tablespoon goji berries (optional)
Slice a banana into bite-sized pieces. Cover a plate with wax paper and insert a toothpick into each piece. Place in the freezer for 1 hour.
Put the coconut yogurt into a small bowl that’s deep enough to dip the frozen banana into.
Remove frozen banana pieces from freezer, dip in yogurt, and add toppings if desired.
Place popsicles back in the freezer for 30 minutes.
