Atlanta has some of the best brunch in the game but sometimes I’m just feeling lazy. The best brunch also comes with excessively long wait times and large crowds that I just don’t feel like dealing with every Saturday morning.
Enter these one bowl pancakes. The batter can be made in three minutes and they’re on the table in 15. The best part? They’re best enjoyed in bed while watching Netflix, no crowds allowed.
One Bowl Pancakes
- Prep Time:3 minutes
- Cook Time:12 minutes
- Total Time:15 minutes
- Servings:7 medium pancakes
- 3/4 cup milk
- 1 Egg
- 2 tablespoon oil
- 1 teaspoon vanilla
- 2 tablespoon sugar
- 1 cup flour
- 1 teaspoon baking powder
Heat a pan over medium heat.
In a medium, mixing bowl, whisk together all wet ingredients.
Add dry ingredients and whisk until just combined. There should be lumps.
Melt 1 teaspoon butter in the pan and swirl around the pan to coat it.
Pour batter onto the buttered surface in 1/4 cup increments. Cook on one side until the surface is coated in bubbles and then flip. Cook for 1 minute or until done.
Repeat with remaining batter and serve warm with butter and syrup.
