Kale is one of the trendiest foods of this decade, and it's been seemingly everywhere. Well now, it's in cake! This kale apple cake is delicious, moist, and you wouldn't know there was kale in it if it wasn't bright green! Frost it with some apple buttercream, top with apples or blueberries, and you have yourself a real crowd pleaser. Here's how to make it:

    Ingredients

  • For the cake:
  • 2 cup packed kale leaves
  • 3 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 2 peeled and grated apples
  • 2 cup flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the frosting:
  • 1 stick butter or vegan butter
  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 2 tablespoon smooth applesauce
  • 1/2 teaspoon cinnamon

  • Step 1

    Preheat oven to 350°F and grease and flour two 9" cake tins.

  • Step 2

    Tear the kale leaves into small pieces and steam for a few minutes until tender. Rinse in cold water, drain and puree.

    Beat together the eggs, oil, vanilla, applesauce and sugar.

    Beat in the kale purée and grated apple.

    Add the flour, baking powder and salt and gently combine.

    Divide the batter between the two tins and bake for 30 minutes of until an inserted toothpick comes out clean. Cool for a few minutes in the pan and then transfer to a wire rack.

  • Step 7

    While the cake is cooling, prepare the buttercream. Cream the butter, then gradually sift in the powdered sugar. Add the vanilla, applesauce, and cinnamon and beat until the frosting has a smooth and uniform consistency.

  • Step 8

    Frost the cake and decorate with apple slices. Serve and enjoy!
