Every year when I go back to school, I want nothing more than to hang onto summer and the days when school was little more than snack time and recess. For this reason, I decided to make s'mores Rice Krispie treats reminiscent of the days I spent a five-year-old in the middle of July worrying about nothing more than how many Rice Krispie treats I would be getting for dessert that night.
The combination is only logical. S'mores taste like summer, and Rice Krispie treats taste like childhood. Well, classic Rice Krispie treats, at least, taste like childhood. As tasty as they are, slutty Rice Krispie treats and Rice Krispies stuffed with Oreos and Reeses don't quite remind me of the treats I loved as a little kid.
Regardless, s'mores and Rice Krispie treats are inarguably an ideal combo. Together they will make you think of nothing more than long days full of swimming and sitting around a campfire. You get all the enjoyment of your favorite childhood snacks and zero hassle with this super quick and simple recipe.
S'mores Rice Krispie Treats
- Prep Time:10 mins
- Cook Time:1 min
- Total Time:11 mins
- 4 tablespoon unsalted butter
- 1 16-oz bag mini marshmallows reserving 1 cup
- 1 teaspoon vanilla
- 1/4 teaspoon sea salt
- 3 cup Rice Krispies
- 2 cup Golden Grahams
- 1 cup semi-sweet chocolate chips
Mix together the Rice Krispies, Golden Grahams, and chocolate chips. Set aside.
In a large nonstick pan, melt the butter over medium heat.
Turn the heat down to the lowest setting and add the marshmallows. Stir until almost completely melted, and then add the vanilla extract and salt.
Once fully melted, remove from heat and pour the marshmallows over the mixture of Rice Krispies, Golden Grahams, and chocolate chips. Stir lightly to combine. Pour into the greased pan and let sit 5 minutes. Then, lightly press into the pan using parchment paper or foil.
Top with the reserved mini marshmallows. Allow them to cool and set about 20 minutes. Preheat oven to broil.
Broil the s'mores Rice Krispies treats until the marshmallows are golden brown. Let cool, and enjoy!
