You name the best part of a weekend brunch, and this recipe has it (sans mimosa): warm fluffy hash browns, steaming eggs, crispy bacon and not just one, but multiple perfect bites.     Ingredients

  • 1 shredded potato
  • 2 eggs
  • handful Parmesan cheese
  • pinch cheddar cheese
  • small clear plastic cups
  • cooking spray

Step 1

Combine eggs, shredded potato and cheeses in a bowl, and mix together.

Step 2

Spray the inside of a plastic cup with cooking spray, and pack the potato mixture inside.

Step 3

Use a spoon or tin foil-wrapped handle to hollow out the inside to form a cup shape. Make sure it’s a big enough hole to put other breakfast foods inside.

Step 4

Let them chill in the freezer for about 2 hours. To get it out of the cup afterwards, run warm water around the outside of the cup and use a knife to wedge it out.

Step 5

Fry the potato shooters in a deep pan for about 4 minutes, or until golden brown.

Stuff with eggs, bacon, cheese, or any breakfast toppings you want, and take a big 'ole bite of your shooter.
