Ripe avocados are a must if you want to get this Mexican classic right. To check for ripeness, just take the little brown stem off the top of the avocado. If it removes easily and it’s green underneath, then the avocado is ripe; if the stem doesn’t come off or if you see brown, then the avocado is not yet ripe or overripe.

Ingredients:
3 ripe avocados
2 roma tomatoes, chopped and seeded
½ cup red onion, chopped
1-2 tablespoons cilantro, chopped
Juice of 1 lime
1 teaspoon chili powder
Salt and pepper to taste
Directions:
1. Cut avocados in half. Carefully take a sharp knife to the pit and twist to remove. Scoop out avocado from skin with a spoon.
2. Place the avocado in a large bowl. For a chunkier guac, cut through avocados with a knife repeatedly while constantly changing angles. For a smoother consistency, mash with a fork.
3. Fold in remaining ingredients, making sure they are evenly distributed, and serve immediately.
