Being away from home for my first fall has me missing baking away my stress a little extra. Unfortunately, many students don't have access to a full blown kitchen but luckily we do have our handy-dandy micro-fridges. Also, how can we not want to bake when we have Wegman's and a farmers market merely minutes away. With foods from our local markets, the accessibility of our micro-fridges and a nice big mug, we are about to create your favorite fall foods (and of course it's going to be both quick, cheap and easy!)

Pumpkin Pie

    Ingredients

  • Graham crackers
  • Pumpkin puree
  • Egg
  • Milk
  • Brown sugar
  • Pumpkin pie spice
  • Salt
  • Vanilla extract

    Mix together 1/3 cups of pumpkin puree, 1 egg, 1 tbsp of milk, 2 tbsp of brown sugar, 1 tsp of pumpkin pie spice and a pinch of salt into a separate bowl and whisk together until silky

  • Step 2

    Layer 2 tbsp of crushed graham crackers on the bottom of your mug as a crust

  • Step 3

    Pour the pumpkin spice mixture into the mug

  • Step 4

    Microwave for 1:30 to 2 minutes (it is normal if it looks slightly damp on top, it will set more as it cools off)

  • Step 5

    Top with whipped cream and attempt to not inhale the entire thing in one bite

Pecan Pie

    Ingredients

  • Melted butter
  • Brown sugar
  • Maple syrup
  • Vanilla extract
  • Salt
  • Egg
  • Pecans chopped and toasted

  • Step 1

    In a separate bowl, whisk together 1.5 tbsp of melted butter, 2/3 cups of brown sugar, 3 tbsp of maple syrup, 1 tsp of vanilla extract, 1/8 tsp of salt, 2/3 cups of chopped and toasted pecans and 1 egg

  • Step 2

    In your fancy smancy mug, layer 2 teaspoons of crushed graham cracker crumbs on the bottom

  • Step 3

    Pour the mix you first made into the mug and microwave for 1.5 minutes and watch that baby bake

  • Step 4

    Top with whipped cream and sprinkle with pecans

Apple Pie

    Ingredients

  • Apple
  • Quick-cooking oats
  • Flour
  • Butter
  • Brown sugar
  • Cinnamon
  • Salt
  • Orange juice

    Place 1 hollowed out apple into the mug and microwave for 60 seconds

  • Step 2

    Mix together the diced meat (middle part) of the apple, 2 tbsp of oats, 3 tbsp of flour, 2 tbsp of butter, 2 tbsp of brown sugar, 1/4 tsp cinnamon, 1/16 tsp salt and 1 tbsp of orange juice

  • Step 3

    Add the mixture into it's own personal apple vessel. Microwave in 30-second intervals, for a total of 90 seconds.
