Adding bacon to anything always makes it better. Combine your two favorites to create the ideal BLT quesadilla meal. Don’t hold back from putting as much cheese as you want. Drizzle it with a sour cream sauce and top it off with a tomato-lettuce mixture. Doesn’t get much better than that, am I right?

- Total Time:20 minutes
- Servings:1 serving
- 1 cup lettuce/spinach/kale
- 2 flour tortillas
- 1/4 cup sour cream
- 3 garlic gloves, chopped
- 1 pinch salt
- 1 pinch pepper
- 1 lime, juiced
- 2-5 strips of bacon, cooked
- 3/4 cup cheese
- 1 tomato
In a medium sized bowl, mix together the lettuce and tomato and season with salt and pepper. Place it in the fridge to marinade and cool.
In a small bowl, mix together sour cream, garlic, and lime juice.
In a skillet, cook the bacon until brown and crispy for about 7 minutes. Dry the bacon off on a paper towel, and make sure to save the grease.
Wipe the skillet off, and spoon a tablespoon full of grease back into the pan over low to medium heat. Add one flour tortilla.
Add bacon and cheese then place another flour tortilla on top and press flat to cook for about 4-5 minutes.
Top the quesadilla with the sour cream sauce and tomato-lettuce mixture then cut into fours. Enjoy!
