I'll never understand why some people don't like broccoli. It's one of the healthiest and tastiest (in my opinion) vegetables you can eat. If you agree with me, good on ya. If you don't... I hope these 3 simple broccoli recipes will change your mind to eat your greens. 

1. Asian Stir-Fried Broccoli and Shrimp

    Ingredients

  • 1 head broccoli
  • 1/2 cup baby corn
  • 1/2 cup carrots chopped
  • 1/2 cup shrimp
  • 3-4 cloves garlic chopped
  • Fish sauce
  • Soy sauce
  • Oyster sauce
  • Sugar

  • Step 1

    In a hot pan, add chopped garlic and sauté for 2 minutes.

  • Step 2

    Add shrimp to the pan and sauté with garlic until shrimp are almost cooked.

  • Step 3

    Add 1 tbsp fish sauce, 1 tbsp soy sauce, 2 tbsp oyster sauce, and sugar to taste.

  • Step 4

    Add vegetables and stir-fry until the shrimp looks cooked and everything is mixed together.

  • Step 5

    Serve with steamed rice and enjoy.

Egg White Omelette with Cheesy Broccoli

    Ingredients

  • 2 heads broccoli
  • Cheese your choosing
  • 4 eggs
  • Salt
  • Pepper

  • Step 1

    Add water to a pot and bring it to a boil. Once boiling, add a pinch of salt and the broccoli. Cook for about 4-6 minutes.

  • Step 2

    For the omelette, crack the eggs and separate the yolk from the egg whites. In a medium heat pan, make an omelette with the egg whites.

  • Step 3

    Drain the broccoli and put it on a bowl or a plate. While the broccoli is still warm, add your choice of cheese and allow to melt. Place omelette on top of broccoli and season with salt and pepper to taste.

Garlic Olive Oil Broccoli Pasta

  • Pasta your choosing
  • 1 head broccoli
  • 1 clove garlic
  • 4 tbsp virgin olive oil
  • 1 lemon
  • Grated parmesan for topping

  • Step 1

    In a boiling pot of water, add in the pasta and cook to al dente. In another boiling pot, add the broccoli and let it boil for 4-5 minutes.

  • Step 2

    Drain the broccoli and put it into medium heat pan. Gently mash the it. Add lemon zest and grated garlic to pan.

  • Step 3

    Drain the pasta and add it to the pan with broccoli. Squeeze juice of 1/2 a lemon. Add olive oil, salt, and pepper to taste.

  • Step 4

    Serve with grated parmesan and enjoy.
