Guacamole

  • Prep Time:30 minutes
  • Cook Time:1 hour

    Ingredients

  • 3 Haas avocados, halved, seeded and peeled
  • 1 lime, juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 1/2 medium onion, diced
  • 1/2 jalapeno pepper, seeded and minced
  • 2 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • Step 1

    Coat the avocado pulp with lime juice in a large bowl.

  • Step 2

    Drain the lime juice and set it aside for later.

  • Step 3

    Add the salt, cumin and cayenne to the avocado pulp. Mash using a potato masher.

    Add the onions, jalapeño pepper, tomatoes, cilantro and garlic and mix together.

  • Step 5

    Mix in 1 tablespoon of the extra lime juice.

    Let the dip sit at room temperature. After about 1 hour, the dip is ready to be served.

Black Bean Salsa

    Ingredients

  • 1 can black beans, drained
  • 1/2 package frozen yellow corn
  • 1/2 medium red onion, diced
  • 1 Haas avocado, peeled, seeded and diced
  • 1 Roma tomato, seeded and diced
  • 1/4 teaspoon salt
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce
  • 1/2 teaspoon cumin
  • 1/2 medium red pepper, seeded and diced
  • Step 1

    Mix the drained black beans, frozen yellow corn, diced red onions, diced tomatoes, diced avocados and diced red pepper together in a large bowl.

    Add in salt, lime juice, chopped cilantro, minced garlic, olive oil, hot sauce and cumin.

  • Step 3

    Serve with Blue Corn Tortilla chips to match the dips color and flavor.

Spinach and Artichoke Dip

    Ingredients

  • 1 cup frozen spinach, thawed and chopped
  • 1 1/2 cup frozen artichoke hearts, thawed and chopped
  • 6 oz cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 cup water
  • Step 1

    Boil chopped spinach and artichoke hearts in 1 cup of water for about 5 minutes, then drain.

  • Step 2

    Heat cream cheese in microwave for about 1 minute, or until soft.

  • Step 3

    Mix together all ingredients in a medium sized bowl.

  • Step 4

    Serve with buttermilk crackers to compliment the dip’s creamy flavor.

Buffalo Chicken Dip

    Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup ranch dressing
  • 1 cup hot sauce
  • 1 1/4 cup shredded cheese
  • 1/4 cup blue cheese crumbles

  • Step 1

    Mix together shredded chicken, cream cheese, hot sauce, ranch dressing and 1 cup shredded cheese in a medium baking dish.

  • Step 2

    Bake for 20 minutes.

  • Step 3

    Sprinkle blue cheese crumbles and the remaining shredded cheese on top.

  • Step 4

French Onion Dip

    Ingredients

  • 2 tablespoon olive oil
  • 1 1/2 cup medium onions, diced
  • 3/4 teaspoon salt
  • 1 1/2 cup sour cream
  • 3/4 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground white pepper
  • Step 1

    Saute onions, a pinch of salt and oil in a pan with medium heat for about 20 minutes, then cool.

  • Step 2

    Mix together the cooled onions and the rest of the ingredients in a medium sized bowl and refrigerate.
