If I had to pick one food to eat for every meal I’d have to choose oatmeal. It’s neutral flavor allows it to easily pair with practically anything, and it doesn’t require much effort to make. AKA you can still make it in the morning even if you haven’t had a cup of coffee.

Chocolate Almond Butter Truffle Oatmeal

Servings: 1

Ingredients:
½ cup old fashion oats
½ cup vanilla almond milk
1 teaspoon vanilla extract
2 tablespoon cacao powder
Almond butter and chocolate

Directions:
1. Combine oats and milk in a small sauce pan. Cook over medium heat until fluffy (about 10 minutes).
2. Add vanilla extract and cacao powder and mix together.
3. Top with almond butter and chocolate

Oatmeal Banana Pancakes

Ingredients:
¼ cup oat flour
1 teaspoon baking powder
½ mashed banana
1 tablespoon chia seed or flaxseed

Directions:
1. In a medium bowl combine all the ingredients.
2. Heat a pan over medium-high heat.
3. Pour a heaping spoon full of the pancake batter into the pan and cook for 2-3 minutes on each side.
4. Top with nut butter and dried fruit and serve.

Fig Infused Oats

Ingredients:
3 Black Mission figs
½ cup old fashioned oats
½ cup vanilla almond milk
Almond butter

Directions:
1. Soak mission figs in water for 30 minutes or more.
2. Puree figs with almond milk in a blender until the milk is smooth.
3. Place oats and milk fig mixture in a saucepan and heat until oats are plump.
4. When the oats are done, place in a bowl, top with almond butter and a fig and enjoy.
