We all promised our mothers that we would make the bed, signed contracts with our professors saying that we would study two hours every night and swore to our roommates that we would refrain from picking at their tasty leftovers whenever we opened the fridge. Let’s be honest, these promises are (more often than not) broken. But, never fear, this sweet recipe will make it easy to keep one promise: the one you made with yourself to eat healthier in the new year. These low-cal, vegan, gluten free PB&B cookies are so deliciously healthy, you can savor each bite knowing that you aren’t breaking your New Year’s resolution.

Prep Time: 5 minutes
Cook Time: 10-12 minutes
Total Time: About 15 minutes

Servings: 12 cookies

Ingredients:

2 ripe bananas
1 cup oats (gluten free)
¼ cup peanut butter
12 peanuts for garnish (optional)

Directions:

1. Preheat oven to 350°F.

2. Peel bananas and place in bowl. Mash bananas with fork.

3. Add peanut butter and mix; once combined, mix in oats.

3. Spoon dough onto non-stick baking tray.
