I. Love. Avocados. They’re fatty, they’re delicious, and they’re the perfect match for so many different savory foods. Here are some ten creative avo-recipes to add to your bucket list!

Pro-tip: Avocados are notorious for spoiling if you look at them the wrong way. If you purchase green avocados, let them ripen on your counter until they turn brown and are soft to the touch. Then, stick them in your fridge for up to a week. The cold stops them from ripening! 

Chickpea Salad Sandwiches

Leave the mayo in the fridge and grab an avocado instead! This vegan sandwich is full of healthy fats and plant-based protein. It’s a good substitute for chicken or tuna salad, if you’re looking to include more fiber and plants in your diet. If you’re not ready to get rid of meat just yet, take a look at this recipe for chicken salad with avocado. 

Creamy Avocado and Spinach Pasta 

The sauce for this recipe is like a pesto and makes for a good bridge for someone who might feel wary about the texture of avocados. You can add cheese or nutritional yeast to add new depth to the recipe! 

Fudge-y Avocado Brownies

This recipe is my favorite one out there for avo-fudge brownies! The fattiness of the avocado makes them a great addition to any bakers repertoire. Customize by adding chocolate chips or nuts to this recipe! 

3-Ingredient Avocado Ice Cream

It doesn’t get much simpler than avocados, condensed milk, and heavy cream. You can customize this recipe with cocoa powder, cookie dough, candy pieces, nuts, and alike. 

Guacamole-Stuffed Onion Rings

This recipe has the potential to become a game-day favorite! The chipotle dipping sauce you can make with it is delicious and a wonderful, creamy addition to any snack platter. 

Basil Avocado Hummus

The best of both worlds is this vegan avocado hummus! It packs both the fat and protein you need for a healthy diet. Hummus is one must-have in my fridge, so this recipe is a perfect addition. Enjoy it with sliced veggies, pita, crackers, in your favorite wrap, or atop a fresh summer salad. 

Pulled Pork Stuffed Avocados

If you want a vegan variation, try some pulled jackfruit on these instead of pork. 

Blueberry Avocado Smoothie

What happens when you run out of yogurt? Add avocado instead! You can substitute any of your favorite berries, or turn it into a smoothie bowl with granola, coconut, and nuts. 

Creamy Avocado Salsa

This three-in-one recipe combines sour cream, salsa, and avocados together for a tasty concoction. Add it to your burritos, enchiladas, or my personal favorite: atop a baked potato!
