Six Ways to Use Trader Joe’s Everything but the Elote Seasoning

If you’ve gone to Trader Joe’s any time in the past few months, you may have stumbled upon their new ‘Everything but the Elote’ seasoning. Like me, you may have bought it impulsively, thinking that since you love elote, you’ll use this seasoning often. However, I found myself at a loss for recipe ideas. After brainstorming a while, I came up with six creative ways to use it:

1.  Cauliflower Wings

Mix a tablespoon or two of the seasoning into the batter, coat the cauliflower in the batter and bake, then top with chipotle mayo and grated cotija cheese.

2. Popcorn

Make plain popcorn, spray with oil, and toss with a generous amount of seasoning!

3. Mac and Cheese

Make mac and cheese using a mild cheese (I used white cheddar), then top with seasoning and crumbled cotija cheese.

4. Sweet Potato Fries

Cut the sweet potato into fry shapes, drizzle with olive oil, then toss with the seasoning, and add cotija cheese if desired.

5. Avocado Toast

You may be thinking that corn on avocado toast sounds weird, but hear me out– just think of it like corn salsa and guacamole on toast! Toast a slice of bread, top with mashed avocado, corn, chipotle crema (chipotle sauce + sour cream), and Everything but the Elote seasoning.

6. Corn Fritters

Mix in an appropriate amount of seasoning into the corn fritter mixture (I used around a tablespoon for this recipe), and top with scallions– or use whatever toppings you have on hand!
