This pineapple curry is an Andhra style curry which is thick in consistency and is packed with exciting and contrasting flavours! The pineapple adds sweetness and juiciness whereas the garam masala and other spices make it spicy. The spices can be adjusted to taste in this recipe in case it’s too hot or too mild. This version is vegetarian, but it is also commonly cooked with chicken.

Ingredients:
Diced pineapple, 1 Onions, finely diced, 1 Green chillies, finely sliced, 2 Ginger, to taste Coriander, to taste Water, 200 ml Garam Masala, 2- 3 tsp. Sugar, 2 tsp. Chilli powder, 1 tsp. Mustard seeds, 2 tsp. Oil or butter, 2 tsp.
Prep Time: 10 minutes
Cook Time: 20- 30 minutes
Step 1:
Dice the pineapple after removing the eyes of the pineapple.
Step 2:
Take a pressure cooker and add heat it for 2 minutes on a stove top, on medium heat. Add oil, let it heat up and then add the mustard seeds. Wait till they pop and then add the onions. Wait for them to turn golden brown, and then add chillies and ginger.
Step 3:
Add the finely diced pineapple to the cooker. Then add the garam masala, sugar, chilli powder and water. Take the lid of the pressure cooker and close the cooker by inverting the lid on it. Let this mixture cook for at least ten minutes. The key to a good curry is to check on it repeatedly and ensure that it has boiled to a good consistency.
Step 4:
Once you feel that the curry has reached a consistency which is not too watery, add the coriander to the curry and serve!
The pineapple curry is best enjoyed with rice, but can also be eaten with chappati or dosa.To spruce up the curry, you can add chicken to the curry as well. To do this, pre-cook about 300 gm of chicken breast which has been cut into chunks, preferably boil them. After this, add the chicken to the curry at Step 3 along with the pineapple and let it further simmer in the curry, after which it will absorb the juices and will have a tangy taste.
