When I was younger my mom taught me one of the greatest life hacks: the microwave poached egg. Even as an avid cooker, I still struggle with poached eggs, and I’ll be honest, I’m too lazy (and hungry) to wait for the water to boil or to use vinegar. Thus, this microwave poached egg hack using Handsome Brook Farm eggs is the move.

Whenever I watch cooking shows (okay, maybe just those one-minute food videos on my Facebook feed), I’m amazed that they’re actually able to make the poached egg in one try. I mean, it’ll take me at least six to get even somewhat close to the perfect poached egg, so I gave up on it years ago. I love making poached eggs and adding them onto avocado toast for the ultimate breakfast fuel (#basic Uand proud), or as my salad protein. If you’re looking for a little more flavor, try this microwave poached egg that tastes like a fajita. Warning: the yolk won’t be as runny as one when you poach it in the water, but you’ll get some yolk porn. Like I said, this hack is truly the way to go!

#SpoonTip: When adding eggs to your salads, make sure to use a dark green, like kale, which really absorbs all the healthy fats and flavors of the yolk.
