When I was younger my mom taught me one of the greatest life hacks: the microwave poached egg. Even as an avid cooker, I still struggle with poached eggs, and I’ll be honest, I’m too lazy (and hungry) to wait for the water to boil or to use vinegar. Thus, this microwave poached egg hack using Handsome Brook Farm eggs is the move.

Whenever I watch cooking shows (okay, maybe just those one-minute food videos on my Facebook feed), I’m amazed that they’re actually able to make the poached egg in one try. I mean, it’ll take me at least six to get even somewhat close to the perfect poached egg, so I gave up on it years ago. That’s why I’m so grateful for the microwave poached egg hack, it’s so easy, a baby could do it! Or, in my case, a hangry college student after a long night at the library.

Because eggs are the main event of this meal, it’s important to buy good eggs, and pasture-raised eggs is always a safe bet. Pasture-raised means chickens have over 100 square feet to roam, so they aren’t cooped up and stressed out. Happy hens produce tastier eggs.     Spray your microwave-safe bowl with cooking spray so the egg doesn’t stick.

    Crack the egg into the bowl and pour in the water.

    Cover with the paper towel (or plate), and cook for 50 seconds on medium power. Then, cook for 35 seconds on lower power.

I love making poached eggs and adding them onto avocado toast for the ultimate breakfast fuel (#basic Uand proud), or as my salad protein. If you’re looking for a little more flavor, try this microwave poached egg that tastes like a fajita. Warning: the yolk won’t be as runny as one when you poach it in the water, but you’ll get some yolk porn. Like I said, this hack is truly the way to go!
