These are three simple, delicious dishes that you're going to learn how to make. Today. These dishes make up an epically well-balanced (and meatless) meal to be enjoyed not only by your self-loving self but also by your roomie/S.O./mom. You pick! Whoever you're loving the most today.

Veggie Ravioli Pasta

    Ingredients

  • 20 oz Buitoni Four Cheese Ravioli
  • 11 oz Buitoni Pesto with Basil
  • 1 cup cherry tomatoes
  • 1 cup chopped fresh spinach
  • 1 cup fire-roasted red peppers
  • 3 tablespoons Parmesan cheese
  • Chopped parsley

  • Step 1

    Make 20 oz Four Cheese Ravioli per package instructions.

  • Step 2

    Combine ravioli, pesto with basil sauce, chopped fresh spinach, cherry tomatoes, Parmesan cheese, and fire-roasted red peppers in a serving bowl.

  • Step 3

    Top with parsley.

Garlic Roasted Carrots

  • Prep Time:5 mins
  • Cook Time:15 mins

    Ingredients

  • 3 long carrots
  • 2 tablespoons olive oil
  • 3 sliced garlic cloves
  • Salt and pepper to taste

    Pre-heat oven to 425°F.

  • Step 2

    Slice carrots in half.

  • Step 3

    Lay carrots sliced side down on a baking sheet.

  • Step 4

    Drizzle with olive oil and top with garlic, pinch of salt and cracked pepper.

  • Step 5

    Bake for 15-18 minutes.

Very Berry Tiramisu

  • Prep Time:10 mins
  • Cook Time:5 mins
  • Total Time:15 mins

    Ingredients

  • 16 oz Greek yogurt
  • 1 tablespoon vanilla
  • 2 tablespoon honey
  • 12 ladyfingers
  • 2 cups frozen fruit for mixed berry compote

  • Step 1

    Add 2 cups of frozen fruit to a pot on the stove over a low flame and cook down for 5 minutes while stirring regularly.

  • Step 2

    Combine yogurt, honey, and vanilla. Mix to combine.

  • Step 3

    In a 4-cup glass Tupperware, arrange 6 ladyfingers on the bottom of the dish, spread half the mixed berry compote over the ladyfingers and top with the yogurt mixture. Repeat with a second layer of ladyfingers, mixed berry compote and ending with the yogurt mixture.

  • Step 4

    Refrigerate until ready to eat.
