Wash U macaroni-lovers have been hooked for years on a Delmar Loop favorite: Cheese-ology. At what other restaurant can you find so many types of delicious macaroni and cheese baked to order in individual skillets? Unfortunately, in just a few days, students will have to make their mac and cheese at home, the old-fashioned way or resort to Easy Mac, if they’re craving this cheesy comfort food. Cheese-ology, located on the Delmar Loop since 2010, will be closing its doors on Saturday, March 7.

Owner Bill Courtney, who was previously a medical researcher, boldly decided to try out the restaurant business in 2010. His concept, a restaurant dedicated solely to mac and cheese, was destined for success from the start. The restaurant has been a hit amongst Wash U students, with its 14 varieties of cheesy noodle-y goodness, including Philly Cheesesteak and Creamy Pesto.

Cheese-ology’s menu has generated a loyal customer base over the years. The restaurant even caters to Vegan tastes with Vegan Mac ‘n “Cheese” and makes its littlest customers feel welcome with a “Just for the Kids” meal. In addition to mac and cheese, Cheese-ology offers salads that are a light balance of greens and grated cheese (more cheese, of course). For those still hungry after dinner, the Frozen Chocolate-Dipped Cheesecake rivals some of the best desserts on the Loop with its sweet assault on your taste buds.

I remember my first trip to Cheese-ology during freshmen orientation, which was also my first time visiting the Loop. Everyone ordered different variations on the classic dish from Broccoli Cheddar to Creamy Pesto to 4-Cheese, as well as warm, soft breadsticks that we passed around the table. The meal was simply delicious and the quickness of the preparation made it perfect for the large group of us.

Cheese-ology cited the high costs of maintaining a small business, especially with rising dairy costs, as the reason for its impending closing. The restaurant bid its loyal customers farewell on its Facebook page, thanking them for supporting Cheese-ology over the last five years.

Make sure to hit up the Loop landmark before Spring Break to take advantage of that cheesy deliciousness one more time.
