2-Ingredient Banana Pancakes with Mixed Berry Compote

I don’t know about you, but at the end of every week, I always find that I have leftover overripe bananas. This recipe has saved my bananas from being wasted and has revived my love of pancakes.

Although these pancakes are wonderful eaten plain, my favorite topping is a warm mixed berry compote — it seems complicated, but it is really not.

Banana Pancakes

    Place banana in a bowl and mash until no lumps remain. Crack egg into bowl and whisk until combined.

  2. Place skillet/griddle over a hot plate/stove and turn to medium heat. Spray skillet/griddle with cooking spray.

    Drop in a spoonful of pancake batter. Cook until the bottom has begun to brown and the edges are set. Flip the pancake and cook for another 3 minutes.

  4. Add strawberries, blueberries, and raspberries into the skillet over medium heat.

    Pour the mixed berry compote over the pancakes. Enjoy!
