By now, mochi is something that we all know and love. It’s chewy, sweet, occasionally comes with ice cream, and is absolutely delicious. Undeniably, it’s the perfect snack or dessert to have when you’re craving a sweet treat. While you may have heard of other mochi-like iterations, like the Dubai chewy cookie or mochi donuts, there’s a completely new version all over tiktok: butter tteok.
What is butter tteok?
Butter tteok, also known as butter mochi, is a sweet, buttery dessert that originated in Shanghai. The viralness of the dessert can be attributed to its explosion in popularity throughout Korean dessert culture. Usually baked with seashell molds, the aesthetic shape and color of the dessert allowed it to be easily posted all over social media by popular creators such as Newt and Albert Cho.
Because it’s made with glutinous rice flour like mochi, it has the same unique chewy texture. Many have compared butter tteok to Hawaiian butter mochi, but its differences lie in the fact that butter tteok is not baked with coconut milk and it has a unique crunchy exterior. And while the name essentially means “butter rice cake,” butter tteok is more often described as a combination of mochi, butter cake, and canele. Crispy on the outside, chewy and buttery on the inside, it’s no surprise that this delicious combination is craved by so many.
How do you make butter tteok?
Now, I know all this talk of butter tteok is making you want to try it for yourself, so let me teach you how to make it. The ingredients are fairly simple, and the process is super easy. All you really need is glutinous rice flour, butter, milk, and sugar.
First, you have to mix about 160 grams and 60 grams of sugar together in a bowl. Next, add 200 milliliters of milk and 30 grams of melted unsalted butter. Finally, add one egg and mix it all together. Sieve the mixture into another bowl and then pour it into a butter muffin tray. Bake it all at around 360o F for around 30 minutes or until it’s golden brown on the outside. After letting it cool a little, you are ready to enjoy it.
This is the most basic way to make butter tteok, but there’s many ways to add your own twist on the recipe with either vanilla, matcha, or whatever other flavors you’d like to try. And while butter tteok is completely delicious on its own, the experience can be even better if you try dipping it in condensed milk.
