Dunkin’s spring menu just recently hit stores, featuring a lineup of returning fan favorites like the Dunkalatte, Sabrina Carpenter’s Brown Sugar Shakin’ Espresso, and the Raspberry Watermelon Dunkin’ Refresher. Rumors of the summer menu are also swirling around, with talks of a brand new Tropical Guava Refresher and Pistachio Shakin’ Espresso joining the menu come summer. Even though Dunkin’ is dropping new items left and right, fans are still finding ways to come up with their own drink creations that aren’t featured on Dunkin’s menu. With a little creativity, fans have created a Rainbow Cookie Dunkalatte, and it’s capturing everyone’s taste buds.

What is the Rainbow Cookie Dunkalatte? 

Rainbow cookies are a classic Italian-American dessert, consisting of three layers of almond flavored cake, fruity-flavored jam, and a crispy chocolate coating. The Rainbow Cookie Dunkalatte essentially puts all of the delicious flavors you taste in rainbow cookies and wraps them up into an iced latte. Who wouldn’t want the taste of a rainbow cookie in their coffee?

The base of the drink is Dunkin’s iconic Dunkalatte, which just made its return to menus this spring. To achieve the exact flavors of a rainbow cookie, the Rainbow Cookie Dunkalatte includes Dunkin’s mocha swirl flavor, raspberry shots, and toasted almond shots. If you’re someone who likes their coffee on the milkier side, you can even add some cream or coffee milk. The raspberry shot mimics the sweet jam that’s spread in the layers of a rainbow cookie, and the toasted almond shot tastes almost identical to the almond-flavored cake. The mocha swirl gives it that chocolate component (which is undoubtedly the best part of a rainbow cookie).

TikToker Grace Mary Williams jumped on the trend and gave the latte a try. She says it tastes identical to a rainbow cookie, and to prove it, she paired it with some actual rainbow cookies. Not only was the Rainbow Cookie Dunkalatte’s flavor true to its name—she even went as far as to say the Rainbow Cookie Dunkalatte is one of the best things ever created. 

Who created the Rainbow Cookie Dunkalatte?

TikToker Rob Pepp can be credited with creating the Rainbow Cookie Dunkalatte. As an avid Dunkin’s fan and a rainbow cookie lover himself, he thought what could be better than combining the two? He did some experimenting with Dunkin’s flavors now that the Dunkalatte has made its return and created the Rainbow Cookie Dunkalatte. And Dunkin’ approves. The brand commented “THIS🤯👏” on Pepp’s TikTok. They’re clearly just as mind-blown at this creation as we are.
