I’ve been feeling a little disconnected lately, from people, from fitness, from everything. You know those phases. It’s usually an indicator of an imbalance in energy or a compounded frustration with one aspect of life that somehow spills over into the other parts. As my coach and mind/body guru, Kareem, always says, “everything is everything.” Lauren Hill had something to say about that too.

So in an attempt to get a handle on things, I hunkered down in my kitchen and thought about ways to get connected back to myself. I started missing home and the food my mom would make regularly: beef stew, baked chicken, stuffed baked potatoes. And that is how this recipe came to be. I can’t say I’m fully back to feeling balanced, but that stuff takes time, like all things worth fixing. So if you’re feeling like you need to connect, make this stuffed sweet potato ASAP and send me an email. I’d love to hear how it turned out!

ingredients:

  • 2 medium sized sweet potato
  • 1 pound of chicken, cut into pieces
  • 1/2 medium yellow onion
  • Red and green peppers
  • Guacamole
  • Buffalo sauce (found through this recipe!)
  • (anything else you want to stuff into the potato!! Live your life!)

Steps:

  1. Chop onion and place in pan over medium heat. Cook until golden brown.
  2. Mix in green and red pepper into the pan until semi soft.
  3. Chop chicken breast and place in pan. Stir until fully cooked. Set aside when done cooking.
  4. Puncture 2 medium baked potatoes with a fork, wrap in damp paper towel, and place in microwave for about 5 minutes to get them nice and soft.
  5. Make guacamole.
  6. Make buffalo sauce.
  7. Slice potato in half the long way to make a boat for all the goodies.
  8. Mix buffalo sauce in with the chicken until it’s nice and coated.
  9. Scoop chicken, onion, peppers, and other fixings on top of sweet potato.
  10. Scoop guacamole on top.
  11. Eat and enjoy.
