Rainbow cookies have always been a favorite treat of mine. Sweet almond cake layers with raspberry jam and a melt-in-your-mouth chocolate coating - I mean, c'mon, what could be bad?
The Company
I came across some picture of some amazingly bright colored cookies, and I was immediately amazed. I knew I had to find out more. So, through investigation, I found out that these cookies were made by Samantha Zola, founder of Zola Bakes.
Samantha grew up In New York City, and always had a special place in her heart for rainbow cookies. However, she knew that they needed an update. So, after attending the French Pastry School of Chicago, and later working in well known bakeries, like Magnolia Bakery, she decided to go off on her own and pursue her passion of the colorful confections that she makes today.
Starting in February of 2017, Samantha created an Instagram page that gained much attention. Immediately, people were asking how they could get their hands on some of her adorable cookies. Thanks to her big dream of making them for a living, people from around the country can taste her cookies.
In the future, Samantha hopes to open up a shop where people could go to pick up some of her treats, but for now, she sells them online, nationwide.
The Cookies
Upon tasting Zola Bakes's cookies, I immediately fell in love. Samantha sells them in 3 unique, but equally amazing flavors: Raspberry, Apricot, and Nutella.

Each of the flavors are layered in between layers of moist, flavorful, and soft almond cake, and then drizzled with a delicious coating of chocolate. But Samantha doesn't stop there. She dusts each cookie with edible glitter for those perfect Instagram-worthy pictures.
