2. Buffalo and BBQ Cauliflower "Wings", with Carrots and Ranch

This also doubles as a great way to convince a carnivorous boyfriend to eat vegetables.

Ingredients:

1 large head cauliflower

2 tbs olive oil

3-5 tbs each Buffalo Sauce and BBQ Sauce (pre-made)

Emma Cleland-Leighton

Core the cauliflower, rub with 1 tbs olive oil, and roast in the oven for 30 minutes at 375 degrees Fahrenheit. Let cool.

Chop into bite-sized pieces, and saute in additional olive oil for 3-5 minutes over medium heat. Set aside half the cauliflower. Add the remaining buffalo sauce to the pan, and saute for an additional minute. Move to a serving bowl, and repeat with the other half of cauliflower and BBQ sauce. Serve with Good Karma Plan-Based Ranch Dip and carrots. You can easily double or triple this recipe for larger groups.

3. Vegan Chocolate Chip Skillet Cookie

This cookie takes less than twenty minutes from start to finish and tastes amazing. Crispy on the outside, chewy and gooey on the inside, and totally vegan.

Ingredients:

1 package Miss Jones Sea Salt Chocolate Chip Cookie Mix

Emma Cleland-Leighton

1/4 cup vegan butter

1 tbs ground flaxseed

Prepare mix according to package instructions. Then press cookie dough into an 8 inch greased cast iron skillet. Bake at 350 degrees Fahrenheit for 15 to 20 minutes, until a knife inserted in the center comes out clean.
