Passover is fast approaching (April 14-22), which means eight whole days of nonstop matzo eating. Because the typical matzo-with-jam combo can get a bit tedious, here are eight bread-less ideas that won’t leave you running bread-crazed to every bakery in town.

1. Matzo for breakfast

Wake up to this Passover creation. Just place a fried egg, some avocado and cheese on your matzo and you won’t miss your toast or breakfast sandwich.

2. Matzo pizza

With the matzo pizza, you can pretend you’re eating thin crust flatbread. Either keep it simple by melting a layer of cheese and then spreading on marinara sauce, or get creative by also chopping up some olives, spinach, and red onions.

3. Matzo sandwich with apples, honey, spinach

The honey and apples naturally sweeten this creation, whereas the spinach balances it out as a healthy green.

4. Matzo Bruschetta

Can’t make it to Italy? Wishing you could still bite into some delicious bruschetta? Well you’re in luck. Throw on some tomatoes, herbs and other veggies and you have a Passover appetizer. Add some matzo-rella to be extra fancy.

5. Matzo with fig jam and goat cheese

Fig jam and goat cheese are a great combo, especially for a quick snack. This blend of sweet and savory will make you forget you’re only on page three of the Haggadah.

6. Matzo grilled cheese

Vamp up the traditional grilled cheese to make it fit your Passover needs. Plus, April is “National Grilled Cheese Month” so don’t let Passover cramp your ability to celebrate.

7. Matzo s’mores

Matzah might not taste exactly the same as graham crackers, but what doesn’t taste great with chocolate and marshmallows?

8. Matzo Bark

Drizzle some chocolate, caramel, pistachios and almonds on your matzo for dessert. You’ll go nuts for it.
