11 Ways to Eat Muffins for Breakfast

Breakfast for dinner is an unavoidable food fad. Who doesn’t love a sweet stack of pancakes or sugary bowl of cereal in place of a boring meat or chicken dish? What you may not have considered, though, is the opposite: dinner for breakfast, or better yet, dessert for breakfast.

Jumpstart your day with these healthy breakfast muffins, which can easily be transformed to a treat more resemblant of a cupcake with the following recipe adjustments:

1. Cream the butter and sugar in each recipe together to create a smooth, fluffy batter.

2. Beat the batter significantly longer than you would when preparing a muffin. This will create a uniformness of air bubbles, and guarantee the light and fluffy texture you want and need in a cupcake.

With just a single bite, you’ll come to wonder why sweets were never part of your early morning diet.
