How to Pack a Road Trip Lunch

Nothing says summertime like a road trip. A car packed full of food and friends makes for an unfortgettable weekend. You know, the good stuff with music blasting down the highway and notable selfie-taking pitstops along the way. Whether you have a destination (Mission Beach, anyone?) or your just need to get away for a weekend, here are some great road-trip snacking options. You’ll thank me later when you’re not stopping at a fast food joint every few hours for a McFlurry or Quesarito.

Appetizer: Fruit parfait

Cool down your appetite with some fresh berries. Strawberries, raspberries, blueberries and blackberries are all in season when the sun’s out and about. Don’t be afraid to add your own favorite fruit, like mangoes or bananas. Layer Greek yogurt, granola and fruit pieces in a tupperware dish and you’re good to go. Check out this recipe, or this one.

Main Course: Turkey sandwiches

Once you’ve been driving for a while, trust me, you’re going to want a homemade turkey sandwich. Toss in the usual ingredients: cheese, tomato and lettuce. Make sure they’re sealed well in plastic wrap, and keep them together in a large Ziploc storage bag.

Drinks: Classic H2O
I know, I know. People typically get all sorts of different sugary nonsense, from energy drinks to Big Gulps. Let me tell you now: there are other (better) sources of energy, you know, the kinds that don’t make you crash later. Water’s always going to be the best thing for you on the road in case it gets too hot anyway. Avoid dehydration in the summers!

Dessert: Mini Snickerdoodles and M&M cookies
Just take any classic cookie recipe and add your favorite candies in! They’re perfectly stackable in a Tupperware container and will tide over all your sugar craving needs on the road.

On the Side: Pita chips & hummus
If you need to nibble on something while you’re on the road, pita chips are a great salty n’ crunchy snack without all the grease of packaged potato chips. You can prepare your own hummus ahead of time, too.
