Yotam Ottolenghi: The Man With The Answers

There are few college students who go to the grocery store to buy ingredients for an intricate recipe from any type of cookbook. There isn’t enough time, energy or money in a day. Who has the time to open a cookbook and sift through the pages to find a recipe that wont take more than 2 hours of your precious time to create? There are the overly ambitious with time for this luxury, but most college students are looking for easy recipes.

Yotam Ottolenghi is my all time favorite chef, who has half a dozen cookbooks out with delicious middle-eastern cuisine. He is the vegetable king, turning any plain legume into a dish worth salivating for. He just released a new cookbook called Plenty More, which is paired with his old cookbook, Plenty. You can even find both at the SU Bookstore!

The book is a mesmerizing display of every vegetable you can imagine, cooked, baked, steamed and chopped to perfection. This book, and quite frankly, any of Ottolenghi’s cookbooks, are an investment worth making. I just made an easy, delicious salad from Plenty More, and it only took me 20 minutes to prepare. It includes peas, avocados and beets! An simple meal that basically only requires a quick run to tops.

Some of his other relatively easy recipes include marinated eggplant with tahini, roasted sweet potatoes and red onions with tahini and
roasted sweet potatoes and fresh figs.
