You Need To Make These Grilled Breakfast Tacos This Weekend

Idk about you all, but I jump at any excuse to use an outdoor grill. In my opinion, everything tastes better grilled, from hot dogs to pizza. And today, I’m sharing with you my all-time-favorite grilling recipe: breakfast tacos. Whether I’m at a lake house or camping, I’m making these bad boys. Not only is it super easy, but they’re filling and delicious, with the savory flavors of Tasty Bite’s Organic Madras Lentils. Don’t forget to tag @spoonuniversity and @tastybite if you try them out!

Ingredients:

1 package Tasty Bite Organic Madras Lentils

½ c shredded cheese

1 c salsa

6 eggs

6 small tortillas

Serves: 6

Total time: 15 minutes

Here’s what you need to do:

Step 1: Preheat your grill to medium-high heat.

Step 2: Add two cast iron skillets to the grill and lightly oil.

Step 3: Whisk eggs and add to one skillet.

Step 4: Add Tasty Bite Madras Lentils to the other skillet.

Step 5: Scramble eggs while simultaneously stirring the lentils.

Step 6: Lightly toast the tortillas by adding to the top rack of the grill.

Step 7: Assemble your tacos: adding scrambled eggs, Tasty Bite Madras Lentils, shredded cheese, and top them off with salsa.

Step 8: Enjoy!
