After months of eating breakfast in West, I now understand why this dining hall seems to be the butt of a lot of jokes. There’s an omelet station, bagels, and the typical breakfast fair, but nothing that screams YUM. And, just when you thought you were getting sick of what West has to offer, I’ve concocted some tweaks and tips that are a must in this dining hall. Don’t worry, you can thank me later.
1. Spicy Fried Eggs With Spinach
To recreate this, get in the egg line and ask for two eggs (either fried or sunny side up) with cheddar cheese and spinach on the side. Then, get real fancy and shake some red pepper flakes on top (or drizzle some hot sauce). Don’t forget the home fries!
2. Bread-less Breakfast Sandwich
This one is like a breakfast sandwich minus the bread. Order two (or four if you’re feeling hungry) sunny side up eggs with spinach, bacon (obvi), and a cheese of your choosing on the inside and you have yourself your own little egg “sandwich.” You can put potatoes on the side or even in the sandwich if you’re feeling wild.
3. Avocado Toast
If you’re lucky enough to get to West in time, ask for some avocado, toast up some bread, and make your own avocado toast. If you really want to go off – throw a fried egg on top and finish it off with some salt and pepper. And again, adding a dash of hot sauce is always key.
4. Classic BECA (Bacon, Egg, Cheese and Avocado)
The bacon, egg, and cheese sandwich is a breakfast staple. Toast and butter a bagel and ask for 2 eggs (any style) with cheese on top. Have the chef put it on top of your bagel and definitely add some bacon. Then, add some smashed avocado because no breakfast is complete without it.
Next time you’re in a little breakfast rut, do yourself a favor and try one of these eggcellent creations. Maybe then you’ll actually feel like West is the best.
