Following seasonal produce is one of my favorite parts of cooking. You wait all year for ingredients you love to incorporate into recipes to be at their peak, and your patience is rewarded by fresh, juicy fruits and vegetables. Springtime not only means the sun is out and the flowers are blooming — it also means it’s time for a fresh batch of seasonal produce. Spring is known for the very snappy and bright vegetables, which can now be displayed at farmers markets and other outdoor produce stands. It can be tempting to try each and every one of them, but if you’re starting small, here are the best spring vegetables as zodiac signs.
Artichoke – Capricorn
Artichokes are a great spring vegetable for cooking because of their nutritional benefits, high fiber, and antioxidants. Whether you steam ‘em, boil ‘em, or turn ‘em into dip, it’s no secret that the strategy for cooking artichokes must be mastered with great discipline and calmness. Naturally, these qualities point me right to Capricorns, aka the “workhorses” of the zodiac. Capricorns are disciplined, regulated, and ambitious, which reminds me of how artichokes promote the overall balance and health in the human body. Capricorns also are stubborn like this spring vegetable, which have an inedible “choke” to conquer before reaching the tender heart.
Arugula – Scorpio
If you’re into bitter vegetables, arugula is probably the spring salad base for you. Once you learn how to pair its peppery flavor with the right meats, nuts, or cheeses, you’ll create an insanely delish and light dish that screams springtime. These qualities of arugula are the same as those of a Scorpio. They may appear bitter on the outside, but once paired correctly with their for-life friends, they can shine as the best versions of themselves. When wilted, arugula tends to hold up fairly well, similar to the Scorpio’s determination and ability to remain unscathed when wronged. They may hold more grudges than arugula though.
Asparagus – Taurus
Asparagus is a solid spring vegetable that boasts toughness and versatility in cooking. Its taste profile is a bit hard to describe because of the contrast between its slight sweetness and grassy, bitter notes. I can definitely describe asparagus as down to earth, similar to Taurus aka the Bull of the zodiac. Earth signs like Taurus tend to be reliable and loyal, and this ability to be a rock for others reminds me of asparagus. It’s always going to be dependable and delicious in any culinary context, but also allows other ingredients on the same plate to equally shine.
Carrots – Pisces
We love sweet ingredients like carrots. Known for having one of the highest natural sugar contents in vegetables, carrots are sweet without trying, just like Pisces. Their personality can be described as extremely empathetic and sensitive to others, making their default nature sweet, caring, and gentle. When roasted in springtime dishes like salads or other nutrient-dense bowls, carrots become mushy and their sweetness is enhanced. Every Pisces is a softie deep down, and they would end up being the vegetable almost everyone likes.
English Peas – Virgo
English peas are only in season briefly in the spring, but their sweet and starchy taste profile makes them great in salads with lots of herbs. The key quality of an English pea is its inedible pod, which is too tough and fibrous. What is left once shelled, however, is a sweet and tender seed, which is definitely worth the effort of reaching. This vegetable reminds me of a Virgo, which is a sign that commonly hides their inner vulnerability with a tough exterior. They may come across as harsh and “indigestible” to most, but those who actually stick out getting to know the Virgo will be exposed to their deeper empathy and grounded nature inside. The protective layer must be shelled to truly enjoy the company and intense loyalty of the Virgo.
Fava Beans – Cancer
This springtime legume is known for a distinct flavor often described as earthy, nutty, buttery, and sweet all at once. This vast mix of different qualities and descriptions reminds me of Cancer, which is the most nurturing and emotional sign of the zodiac. Cancers are the first to provide emotional support, especially to their inner circle of loved ones, and the fava beans’ tender texture is similar to this deep nature. Cancers can get caught up in their own emotions, often overwhelmed by the many feelings and ups and downs they tend to experience, but even if hard to describe like a fava bean, both are extremely warm and reliable.
Fennel – Leo
Fennel is a standout spring vegetable because of its unique anise flavor. Its taste profile is often described as distinct, sweet, herbaceous, and bright. This ability to be different and popular points me right to Leos, who beat to their own drum and can be themselves in almost any context. The crunchy, crisp, and refreshing traits of fennel are just like the confidence and charisma of the Lion of the zodiac. Leos are natural leaders who enjoy the spotlight, and with a flavor profile as unique as anise, fennel personified would have those exact same traits.
Radishes – Aquarius
Don’t fear the intensity of the radish because its crunchiness can be roasted down to a sweet and mellow spring vegetable. Radishes are just as sharp as the Aquarius, who may always be looking for the next side quest, crazy adventure, or ability to flaunt their independence. Aquarius can definitely be an intense, hard-to-read sign, but they’re highly intellectual and crave depth in friendships. Once they find the right outlets for their need to process the world around them, they can become more mellow and sweet like a roasted radish.
Ramps – Aries
Ramps have a fiery, intense onion flavor, making them a perfect addition to spring dishes. They come into peak season just in time for the astrological phase of Aries a.k.a. early spring. Aries is the ram of the zodiac, and their fiery nature makes them fierce, bold, and willing to go after what they want at all costs. The pungent, sharp nature of ramps is basically the personality representation of an Aries, and if you really think about it, you can’t spell ramps without ram!
Rhubarb – Gemini
Rhubarb is an interesting flavor and is more tart and vibrant than your typical vegetable. It’s often paired with the sweetness of strawberries in spring and summer to balance out its intense flavor, but even on its own it can be refreshing in a different dish. There is a duality to rhubarb that reminds me of the Gemini, which is characterized by its dual nature. Geminis often get accused of being two-faced because of this symbolism to twins, but in reality, Geminis can use this quality to their advantage by offering multiple perspectives and being communicative. This balance between the sharpness and sweetness makes a Gemini and radish extremely similar.
Scallions – Libra
If you’re looking for a balanced friend, look no further than the Libra, which is also as aesthetic and charming as scallions in the spring. Libras are flexible and go with the flow, making them a reliable choice for the friend that can be thrown into any situation and handle it with ease. Scallions are just like this, and when in season, they’re digestible in any and all spring cooking contexts. They also often serve as a garnish to make dishes look prettier and more presentable, similar to the great taste and poise every Libra boasts.
Sugar Snap Peas – Sagittarius
Sugar snap peas are a classic springtime vegetable that offer a more refreshing nature than the rest of the vegetables in season at this time. They’re light-hearted and enjoyed by almost everyone, even the pickiest of eaters. The sweetness, sociability, and energetic nature of the Sagittarius reminds me of these peas because they bring joy to everyone around them. While sometimes a bit too fast-paced or high energy, Sagittarius can still be an adaptable person in different social settings, just like a sugar snap pea can be used and still remain delicious in different dishes during spring.
