Meredith Hayden is known for her cooking videos and TikToks about her life as a private chef. But she really is a connoisseur of a good snack. First, it was $50 potato chips and Iberian ham nachos, and now ice cream and waffles. No one saw this delicious, easy snack coming. Earlier this week, Hayden, also known as @wishbonekitchen, was ready for an event in New York City and realized she had forgotten to eat lunch. So, she threw together a quick ice cream sandwich with the best bread ever, Eggo Waffles.
This Eggo waffle ice cream sandwich is perfect for the ones of us who have barely any groceries in our apartment or dorm right now. Although a lot of us may have these two items in our freezer, I would have never thought to put them together. I don’t know about you but this ice cream sandwich is going to save me money in the most delicious way possible.
Hayden mentions in the video that this snack was her childhood. This snack is nostalgic for her and maybe for some other people too. She also said she wanted to share this recipe because it could be “revolutionary” for others. For me, it was revolutionary, and for many in her comment section. It’s the perfect mix of crunchy and creamy.
The sandwich has only two ingredients, Eggo waffles and ice cream. Wishbone Kitchen uses two toasted, still-warm original Eggo waffles and vanilla ice cream. You can use any kind of Eggo waffles and ice cream you’d like to make this fun snack at home. Personally, I used two Eggo waffles and coffee cookies & cream ice cream. I toasted the waffles and microwaved the frozen ice cream for 15 seconds. Then, I scooped the ice cream on top of one of the toasted, still-warm waffles and placed the other one on top. I squished them together and took my first bite. This snack is delicious, the mix of warm waffles and cold ice cream make it the perfect afternoon snack.
As far as I could see, not a lot of people have tried this recipe recently, but back in 2013, a Buzzfeed writer wrote about some creative ways to use packaged and canned foods and the Eggo Ice Cream Sandwich was one. On Eggo Waffles’ website under the Desserts and Treats Recipes, there are many with ice cream including Mini Ice Cream Sandwiches. Eggo even made a TikTok showing how to make them for National Ice Cream Day this summer. They also have great recipes just in time for the Holidays including a Halloween Peanut Butter Candy Waffle and an Ice Cream Spider. I don’t know about you but I can’t wait to give this delicious combo a try… again.
