The gif I included in the header is a nice one, isn’t it? So romantic, sexy, and classic. Now, the title of this article, “Spaghetti for One,” is a big warning sign that reads “I used this gif because I am a romantic at heart but in reality I ate alone.” So if you want to hear about the first few weeks of my experience living alone and the spaghetti I made for myself, you are in the right place. Also, I promise I included more food than just the spaghetti.
Week One
In my previous post, I mentioned how I am big on telling the truth, so no lie, my first week in my apartment was hard. I don’t think anything could have prepared me for the silence. It was the silence that drove me crazy and made me feel as if I was utterly alone. Since I did go out of town for the fourth of July I quickly had a little break, but in total honesty, the first three days were strange. Not a lot of cooking happened and really not a lot of anything happened other than homework and binging Big Little Lies.
Weeks Two and Three
Week two was a game changer. After a well-deserved cry (no lies here) and some time at the beach, your girl was back on top.
First, I learned all you need is food, a speaker, and some good company. The first thing I did when I got back to town was purchase a speaker, pick a recipe, and send some texts. This brings us to our first recipe of Chrissy Teigen’s, Lemony Arugula Spaghetti Cacio e Pepe.
Long story short, it was super simple and super delicious. To set the vibe, I put some jazz music on and poured myself a glass of wine. Making the sauce/coating was my favorite part. The aroma from the spices made my entire apartment smell like a kitchen in the countryside of Italy. I did have to substitute the arugula for spinach and the grated parmesan for shredded parmesan, but it still tasted wonderful.
Although I was alone, spaghetti for one is not that bad. There is the benefit of being able to eat as much as you want, though for me I made way too much so this didn’t really matter. You also don’t have to worry about the way you look; trying to eat spaghetti whilst not looking like a heathen is a struggle for me.
The entirety of this period has been amazing because all I truly did was eat, sleep, crack on and repeat (and binge Love Island).
Some Other Kitchen Discoveries
Old Bay and eggs: Quite a lovely surprise. Accidentally poured a sh*t ton in when scrambling my eggs and it actually tasted really good. Good on toast.
Sliced almonds go on anything: That’s all I have to say.
Canisters: There is a whole in my sugar bag, and now sugar and flour containers have been added to my shopping list. I am slowly but surely becoming my mother (which is not a bad thing, seriously).
Some Last Words… For Now
In my first post, I advertised I would learn from this experience. So far, I have learned that red pepper flakes aren’t mild when used in abundance. I have learned to not boil water if you want a cool kitchen. I have learned how to restrain myself when ordering out by reminding myself there is food at home.
I’m thinking skillet eggs and a Thai recipe next time, but who knows.
