If you’re anything like me, you could eat a poached egg on avocado toast for any meal. Unfortunately, not everyone has the luxury of a stove top to poach their eggs or sometimes the skill. But have no fear, the microwave is here and its about 1,000 times easier.

Cook Time: 45-50 seconds
Total Time: about 2 minutes
Servings: 1
Ingredients:
½ cup water
1 egg
1 slice of bread
½ avocado
Chili flakes
Directions:
1. Pour water into mug.
2. Crack egg into mug, careful not to break the yolk.
3. Cover the mug with a dish and microwave for 45-50 seconds, 45 seconds results in a runnier yolk.
4. Spread avocado on bread.
5. Top toast with poached egg and chili flakes.
