What’s better comfort food than a loaded baked potato? Loaded cheesy potato nachos, of course. Whether you’re hosting a party, having a roomie night, or watching the football game with friends, these ‘tater nachos are sure to leave everyone satisfied. Cheese-gasm, guaranteed.
Cheesy Potato Nachos

- 2 large baking potatoes, sliced
- 1 1/2 tablespoon butter, melted
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
- 1/4 cup bacon bits
- 1/4 cup green onion
Preheat oven to 400°F.
Grease a baking sheet with non-stick cooking spray.
Cut potatoes into thin slices and line on the baking sheet.
On both sides, brush potatoes with melted butter and sprinkle salt.
Place into the oven and bake for 15 minutes or until golden brown. Flip the potatoes and place back into the oven for 15 minutes.
Sprinkle cheese and green onion.
Bake for 3-5 minutes or until the cheese starts bubblin’.
Sprinkle a little bacon. Top with sour cream and guac if ya dig.
