As the end of the semester approaches, finals are the only thing between you and the freedom of summer. Instead of reaching for that third cup of coffee, try these delicious energy bars. Packed with antioxidant-rich blueberries, blood flow-boosting dark chocolate, and alertness-enhancing walnuts, they will make studying for those tough finals a breeze. Even after finals, the nutty crunch of the pistachios will keep you coming back for more. 

Blueberry Brain Bars

    Ingredients

  • 1 1/2 cups old fashioned oatmeal
  • 1 cup smooth nut butter
  • 1 cup almonds
  • 1/2 cup pistachios
  • 1/2 cup walnuts
  • 4 tablespoons dark chocolate chips
  • 1/4 cup honey
  • 1/4 cup apple sauce
  • 3/4 cup dried blueberries

  • Step 1

    Combine all dry ingredients in a large bowl and stir well. This includes the oatmeal, almonds, pistachios, walnuts, chocolate chips, and blueberries.

    Mix the honey and apple sauce into the dry ingredients and stir well.

    Add the nut butter to the mixture. Pour/scrape the mixture into an 8" x 8" pan. #SpoonTip: Other sizes work, but remember that thicker bars will be more difficult to cut. I always put my mixture in off-brand Tupperware.

    Freeze for at least 2 hours before easing the bars out of the pan and cutting them. Store in the freezer and enjoy!
