Nutella Strawberry Pancake Bites

- 1 cup flour
- 1 teaspoon salt
- 2 tablespoon butter, melted and cooled
- 2 eggs, separated
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/2 cup Nutella
- 6 Strawberries, chopped into small pieces
- Cooking spray
Preheat the oven to 350°F. Whisk together butter, milk, vanilla, and egg yolks in a bowl (save the whites for later).
Combine flour, sugar, salt, and baking powder in a large bowl. Add liquids from step 1 and stir until smooth.
In a separate bowl, whip egg whites until stiff peaks form. fold this into the batter a little at a time, until smooth.
Grease the cups of a muffin tin using cooking spray. Then, fill each cup about 1/3 full with the batter.
Using a small spoon or scoop, add about a teaspoon of Nutella in the center of each muffin. Gently add 2-3 small pieces of strawberry to the center, being careful not to press the Nutella to the bottom.
Cover the fillings with batter, then bake for about 10 minutes or until a toothpick inserted into the muffin comes out clean.
Drizzle or dip with maple syrup, and enjoy.
