How to Make a Spring Picnic Salad

With Spring in the air and fresh fruit in bloom, there’s no tastier and healthier way than to incorporate all of these flavors into one great salad. Easily made in your dining hall or kitchen, this perfect spring picnic salad will quickly make Spring your favorite season of the year.

Ingredients: 
1 ½ cups arugula
1 ½ cups spinach
1 medium sweet potato, boiled and cut into ½ inch cubes
3 tablespoons goat cheese
1 tablespoon sunflower seeds
2 tablespoons pomegranate seeds
¼ cup olive oil
¼ cup vinegar
Zest and juice of ½ orange
½ teaspoon mustard
Salt and pepper to taste

Directions: 
1. Prepare all ingredients as listed.

2. Whisk the oil, vinegar, orange zest, orange juice, salt, pepper and mustard together in a bowl.

3. Combine the whisked dressing with the greens in a big bowl.
