Mix It Up With These Baked Mixed Berry Potstickers
Personally, I have never liked summer. It's hot, humid, and I am bored all the time, but the one thing I love about it is all of the fresh produce! Going to farmer's markets and seeing what sort of fruits and veggies I can snatch up and cook makes the heat of the sun not seem so unbearable. My all time favorite summertime fruit is berries of every kind, and I decided to mix it up and try a new recipe! These baked mixed berry potstickers are a fun little twist and yet another way to enjoy my favorite fruits. Plus, I had leftover wonton wrappers, soooo using-leftovers-mission accomplished!

These were super tasty and I ate it with Arctic Zero's Snickerdoodle Dandy Frozen Treat which was probably the best decision I've ever made. The cinnamon in both the potstickers and the cookie chunks of the frozen treat balanced with the sweetness of the berries was incredible. Some pointers for you guys after making it: Let them sit for a little bit after they are done baking so that the wrappers can soften up a little bit. Also, don't be afraid to really stuff those puppies because the fruit will shrink after heat is applied!
So, there you have it! Be adventurous in the kitchen this summer! And if you want to try another creative berry recipe, try out this Berry Parmesan Oat Crumble or stick with the classics with this Whole Wheat Berry Muffin!
