It seems like edamame took off overnight. One day, every trendy new restaurant suddenly had their own twist on this delicious soybean.
Not only is it tasty and fun to eat, but it’s incredibly quick and easy to cook. A few minutes in a pan and you’re ready to snack. There are a thousand recipes I’ve found for classic salted, teriyaki, spicy and every other savory flavor you could want.
But what I hadn’t found is a recipe for a sweeter version of this snack.
So, I took the matter into my own hands and created my own recipe for apple and brown sugar edamame.
Prep Time: 5 minutes
Cook Time: 10-15 minutes
Total Time: 15-20 minutes
1 bag frozen, uncooked edamame in the shell
1 medium-size, sliced red apple
2 tablespoons light brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1. Over medium-low heat, simmer frozen edamame for 5 minutes.
2. Add apple slices and toss in with tongs.
3. Turn down heat and add brown sugar. Remember that sugar burns easily, so if it starts to smell like it’s burning, lower the heat and remove pan from burner until the smell goes away.
4. Add cinnamon and toss.
5. Add vanilla extract and toss.
6. Let simmer for 10 minutes, tossing with tongs occasionally. Once beans are tender, remove from heat and pour into a bowl.
*In case this is your first experience with edamame in the shell, simply place the pod between your teeth and suck out the beans.)
