Going vegan is hard. Giving up pizza is even harder. But thanks to this recipe, you can have it all - and in under 15 minutes! Enjoy this cheese-less cuisine as you laugh at yourself for thinking that vegans don’t have any taste, or tastebuds for that matter! All you need is a crust of your choosing - my favorite is a classic flatbread, but feel free to go for less carbs with a cauliflower crust or whole wheat wrap! Then, spread on some vegan basil pesto (mine is from Trader Joe’s!) and top with spinach and chopped grape tomatoes. Of course, feel free to exclude or add as many toppings as you like. Sprinkle on some nutritional yeast, which is the pixie dust of a vegan lifestyle, and put in the oven at 375 degrees for 10-12 minutes. Pro tip: for the best insta-worthy pics, wait until after it’s baked to add the avocado, so it stays nice and green! All that’s left to do is cut it (or don’t, I won’t judge) tease your carnivore friends with it, and enjoy! *Disclaimer: there will not be any leftovers so don’t plan on saving any.
