Screwdrivers, Bloody Mary’s, mimosas—from the popularity of these brunch cocktails, it seems like the cure for a hangover is more booze. One drink that rarely makes an appearance at breakfast? Beer. That’s the secret ingredient in these moist, slightly sweet and savory muffins that make for the perfect brunch dish, hangover or not.

Servings: 12 muffins


3 cups Bisquick
4 teaspoons sugar (increase to 2 tablespoons if you prefer a sweeter muffin)
1 12-oz. beer
Optional: 1 cup shredded cheddar cheese, 3 tablespoons chopped green onion or green peppers


  1. Preheat oven to 350 °F.
  2. Mix together Bisquick, sugar, and beer in a bowl until just combined. Do not overmix! Add optional cheese and scallions. Fill each muffin tin 2/3 of the way with the batter.
  3. Bake for 15-20 minutes. The muffins are done once you insert a toothpick into the center and it comes out clean.
  4. Let cool and enjoy!
