Spoon UIUC teamed up with Food & Wine magazine to increase awareness about the problem of food waste on our campus. With a microgrant of just under $100, we created 10 original recipes to show you how you can transform leftover late-night eats into something equally amazing the next day.

Attempting to heat a leftover burrito is quite possibly more challenging than the stats homework I’ve been avoiding all week. Seriously, I can barely get the thing unstuck from its container – not exactly appetizing.

So we came up with this Mexican fried rice recipe to transform lifeless leftover burritos into fiesta-worthy fried rice dishes. Extra cheesy. Extra easy. Extra good.

Carne Asada Burrito Mexican Fried Rice

  • Prep Time:10 minutes
  • Cook Time:7 minutes
  • Total Time:17 minutes
  • Servings:4-6 servings
  • Easy

    Ingredients

  • 2 cups of rice, cooked
  • 1 jar of salsa
  • 1 cup Mexican cheese blend, shredded
  • 1 leftover burrito supreme
  • 1/2 avocado, for garnish
  • 3 eggs
  • Step 1

    Cook instant white or brown rice in microwave. Scramble eggs, and remove tortilla from burrito filling and set both aside separately.

  • Step 2

    Heat sauté pan and add rice and burrito filling. Mix and let cook for two minutes.

    Add salsa, cheese and scrambled eggs to the pan and mix well. Let cook for five minutes or until cheese melts completely.

    Slice avocado and serve over fried rice with extra cheese.
