    Ingredients

  • 1/2 - 1 ripe avocado (halved, pitted, peeled)
  • 1/4 cup fresh basil leaves
  • 1 clove garlic
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 2 1/2 tablespoon olive oil

  • Step 1

    Place 1/2 ripe avocado, fresh basil, peeled garlic, lemon juice, salt, and pepper in the food processor. To make a thicker pesto, add an entire avocado.

    Mix until all ingredients are slightly chopped. The mixture will not be completely smooth at this stage.

    While the processor is running, drizzle in the olive oil until completely combined.

    Mix with pasta, zoodles, or eat atop toast. But let’s be honest, I’d eat this stuff on anything.
