As a college student, summer break proves to be an ideal time to sift through my mom’s recipe box and try my hand at making delicious childhood favorite foods. At first glance, this banana bread recipe may not seem out of the ordinary. But unlike your typical dark brown, crumbly loaf of banana bread, this recipe featuring a key ingredient: buttermilk. The special addition results in a buttery, light-colored loaf of goodness that is sure to please.

Buttermilk Banana Bread

    Ingredients

  • 4 over-ripe bananas, mashed
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 cup sugar
  • 1/4 cup buttermilk
  • 2 teaspoon vanilla extract
  • 2 cup flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1 pinch salt
  • 1 pinch nutmeg

  • Step 1

    Preheat oven 350ºF.

     

  • Step 2

    Sift together flour, baking powder, baking soda and salt.

    Mash bananas and set aside.

  • Step 4

    Cream butter and sugar with a mixer on medium-high speed for 2 minutes.

  • Step 5

    Add in eggs one at a time, and buttermilk and vanilla until batter is just combined.

    Pour flour into the mixture.

  • Step 7

    Remove bowl from mixture and fold in mashed bananas.

  • Step 8

    Divide batter into greased loaf pan and bake for 1 hour or until a toothpick comes out clean.
