For anyone who appreciates oatmeal as much as I do, there’s no doubt that what makes it so great is its versatility. It can satisfy people of all ages, whether you prefer the nostalgia of dinosaur eggs and apples and cinnamon oatmeal, or have the sophisticated palate for overnight and steel cut oats. These fall inspired oatmeal pancakes take a new spin on this staple breakfast food by combining pumpkin, white chocolate, and of course, oatmeal.

Pumpkin Oatmeal and White Chocolate Pancakes

    Ingredients

  • 2 cup pancake mix
  • 1 1/2 cup water
  • 2 heaping spoonfuls pure canned pumpkin
  • 1 cup oatmeal
  • 1 tablespoon pumpkin pie spice
  • 1/2 tablespoon cinnamon
  • 1 cup dry oatmeal
  • 1 1/2 cup white chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup pumpkin flax granola (flavor optional)
  • 1/4 cup coconut (optional)

  • Step 1

    Combine pancake mix, water, pumpkin puree, oatmeal, pumpkin pie spice and cinnamon until fully incorporated.

  • Step 2

    Set aside 3/4 cup of white chocolate chips to melt in the microwave. Sprinkle remaining white chocolate chips and chopped pecans onto pancakes once they are on the pan or griddle.

  • Step 3

    Make 4 large pancakes and drizzle melted white chocolate on top of the stack in addition to granola, coconut and remaining pecans.
